Crispy Black Bean Tacos with Cilantro Lime Sauce

Ingredients

  • avocado oil 4 tbsp
  • black beans 3 14-ounce cans
  • cilantro leaves 1/2 c
  • garlic cloves 2
  • green onions 1/2 c
  • limes 2
  • olive oil or butter 4-8 tbsp
  • salsa 3/4 c
  • salt 1/2 tsp
  • small flour tortillas 20
  • sour cream or avocado 1/2 c
  • taco seasoning 4 Tbsp
  • water 4 tbsp

    For the cilantro lime sauce, blend avocado oil, water, green onions, cilantro leaves, garlic cloves, salt, the juice of limes, and sour cream or avocado in a blender until mostly smooth.

    Set aside.

    Pulse black beans, salsa, and taco seasoning in a food processor until combined.

    Transfer the filling to a skillet with a small drizzle of oil.

    Cook over medium heat for 5 minutes to deepen the flavor.

    Spread a few tablespoons of filling into each of small flour tortillas.
