Spicy Black Bean Soup
Ingredients

- Olive Oil
- Garlic
- 2 Medium Onions
- 5 Tsp Cumin
- 2 Tsp Red Pepper Flakes / Gochugaru
- 4 Cups Veggie Broth
- 4 Cans Rinsed Black Beans
- 3 Limes
Optional Toppings
- Avocado
- Tortilla Strips
- Cilantro
- Vegan Cheese/Sour Cream
Steps
- Heat oil in large pot. Dice onions and saute until golden.
- Stir in Garlic, Cumin, and Red Pepper Flakes. Cook until fragrant.
- Add Broth and Beans, simmer for ~30 minutes stirring occasionally.
- Transfer a little under half the broth to a blender. Blend until smooth, then add back to the soup.
- Juice limes, then add in to taste.
